The majority of our beef is sourced from Coppice House Farm where we pride ourselves on a high standard of animal welfare. The remainder of our beef is sourced from other local farms who share our welfare standards.
Breed
Our herd is made up of traditional breeds including Hereford, Shorthorn X and Belgian Blue. All our cattle are free-range and are fed on a diet of hay, barley straw and corn and we forbid the use of growth-promoters or antibiotic feed. Recently we have added six Dun Galloway cattle to our breeding stock. The Galloway breed is well regarded and are in great demand by many butchers whose customer's appreciate the taste of this natural, flavoursome beef.
Studies have shown that Galloway beef is low in total fat and saturated fat. The beef is also high in beneficial Omega 3 and Omega 6 fatty acids, making it more beneficial than pork and as good as chicken and salmon. We will keep you informed of progress and availability of this delicious beef.
Preparation
We take our animals locally for slaughter to Bramalls in Oxspring, this results in a calm and stress free process. The whole carcus is then hung for a minimum of 14 days to ensure the optimum flavour and tenderness of the meat followed by all butchery carried out at our onsite butchery by Mick and his butcher Dale using traditional techniques.
Beef is full of flavour and works well with a wide variety of fresh vegetables which we can also provide. To enjoy a really good beef meal you need to be able to choose from a variety of cuts to suit the meal occasion. Selecting the right cut of meat for your recipe is essential as it can make a huge difference to the end result in terms of cost, cooking time and flavour. Our butchers can prepare any cut of meat you require including speciality cuts such as Rib Eye steak, Rib Roasts and Oxtail. All our products can be ordered in advance so should you require a certain item for that special occasion, please ask the shop staff.
