Our pork is provided from a local supplier within twenty miles of Coppice House Farm Shop. We have an excellent relationship with them and often visit their premises. We insist on locally produced pork as
two-thirds of pork imported into the UK is produced under conditions which would be illegal in this country. The herd is mainly fed on a diet of hay, barley straw and corn; as with all of our stock,
we forbid the use of growth-promoters or antibiotic feed. We recently added a herd of pigs to the livestock we keep on Coppice House Farm.
Breed
We recently finished some of our own rare breed Gloucester Old Spots. The ‘Old Spot’ is the most common of the rare breeds and is a wonderful animal with a great personality and a fantastic flavour that distinguishes it from many modern breeds.
A big part of the difference lies in the fat. Modern pigs have hardly any fat whether as visible backfat or as marbling within the muscle. The ‘Old Spot’ has a distinct layer of backfat and marbling within the meat. This layer of backfat means that it is hardy enough for outdoor production but it also means that when the meat is cooking, it is being basted in its own fat making the meat succulent and full of flavour. We suggest you try it for yourself and let us know what you think.
Preparation
All our pork is butchered in our onsite butchery using traditional techniques.
Possibly the most versatile of meats, pork comes in a variety of cuts – many of them relatively inexpensive. The following products are normally available for purchase, prices and availability may vary so please enquire when visiting. All products can be ordered in advance so should you require a certain item for that special occasion please ask the shop staff.
Pork cuts & products
Whole Leg – Delicious crackling, great joint for a Sunday or weekday roast.
Boneless Rolled Roasting Joints – Succulent and easy to carve.
Leg Steaks * – Suitable for cooking quickly by grilling, frying or in the microwave.
Ham & Gammon - Delicious with mustard or pickle.
Neck-end - Provides good sized roasting joints and ideal for grilling, braising or frying, but can also be diced for casseroles.
Loin - bone-in ribs, loin chops, boneless steaks and joints.
Chops/Steaks * – Can be quickly cooked by grilling, frying, roasting, microwaving or on the BBQ.
Bacon – Lean to streaky and cut to your requirements.
Spare Ribs * – Ideal for grilling, the BBQ or roasting and delicious in a BBQ or Chinese style marinade.
Stir-fry Strips - Perfect for quick stir fries, curries, soups, warm salads.
Diced Pork * – Ideal for casseroles, curries, stir-frying and kebabs.
Pork Pie - Various delicious combinations available..
Pork Mince – Makes fantastic stews, soups, meatballs and stuffing
Sausage * – Wide range of flavours available including Gloucester Old Spot, Cumberland, Lincolnshire, Tomato, Sweet Chilli, Cracked Black Pepper, Pork and Leek, Lemon and Country Herb… (arguably) the best local sausages you can buy.
